This WP targets the off flavour problem at its sources by prevention of microbial production of geosmin. Prevention of geosmin production will be addressed via the functional physiology of microbiota, based on the hypothesis that this compound has a specific, but presently unknown function to microbiota and is thus produced for specific reasons under specific conditions. Gene expression will be used to measure geosmin synthesis of microbiota under different environmental conditions.
The main goal is to establish environmental conditions that either stimulate or inhibit geosmin production. This knowledge will be used to prevent microbial geosmin production in aquaculture systems and will lead to a new design blueprint of future RAS avoiding off flavour production at all (WP5).
